Low Carb Shrimp Tacos w/ Chipotle Sauce

INGREDIENTS

SHRIMP

  • 1 pound shrimp, peeled and tails removed
  • 1 Tbsp avocado oil
  • 1/2 tsp cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper 

CHIPOTLE SAUCE

  • 1 tomato
  • 1/8 of a onion
  • 1 garlic clove ( roasted)
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp cumin
  • 1/2 cup mayonnaise
  • 4 chipotle peppers in adobo sauce (blend everything together and done)

INSTRUCTIONS

TO MAKE SHRIMP

  1. In a bowl toss shrimp with oil and the spices.
  2. Heat a large skillet over medium high heat. Add shrimp and cook for 3-4 minutes each side until the shrimp is pink and opaque.

TO MAKE CHIPOTLE CREAM SAUCE

  1. In a blender, toss mayo with chipotle pepper in adobo sauce, tomato, onion, garlic clove, salt, oregano, and cumin blend until smooth. Set in the fridge until ready to use.
  2. Serve tacos w/ cabbage extra salsa and squeeze of lime juice.
